The first time I landed in the country in 2017, I was enamored by Tokyo’s glowing skyscrapers, Kyoto’s quiet kissatens (cafes) and countryside hills blanketed in electric shades of orange and fuschia that flashed like neon lights aboard the country’s famous bullet train.
